Happy Pancake Day! 3 Easy Basic Recipes for Extraordinary Pancakes

Pancake Day is probably the best day of the year. I mean, right after Christmas and your Birthday of course. And the week surrounding Pancake Day and Valentine’s Day is called “Pancakeltines”. Who knew?

Lots and lots of people, companies and schools are taking this day as an excuse to make pancakes. I mean, why wouldn’t they? It’s an amazing excuse! An entire day where you don’t have to feel bad about eating like, 5 pancakes. And the best thing? They’re super easy to make!

Most of the time, you don’t need more than 7 ingredients that you probably already have at home anyway. We even have one recipe that only contains 2 ingredients and no milk! More on that later.

Pancake Day Recipes

Basic Fluffy Pancakes

Servings: 4 | Time: 20mins

Ingredients:

  • 140g flour
  • 2 tablespoons sugar
  • 2 tablespoons baking powder
  • Pinch of salt
  • 300ml milk
  • 1 tablespoon vegetable oil
  • 1 large egg

Directions:

  • Preheat oven to 200°C, have a baking tray lined with baking paper to keep the pancakes warm before you eat them.
  • Combine flour, sugar, baking powder and a pinch of salt in a small bowl.
  • In a bigger bowl, whisk together milk, 2 tablespoons of the vegetable oil and the egg.
  • Add dry ingredients to the wet mixture and combine carefully, don’t overmix.
  • Cook each pancake in a frying pan over medium heat until the surface starts to bubble slightly (1-2 minutes on each side)
  • Keep the pancakes warm in the oven until you eat them.

Basic Thin Pancakes

Servings: 4 | Time: 30mins

Ingredients:

  • 300ml milk
  • 2 large eggs
  • 1 tablespoon vegetable oil
  • 100g flour

Directions:

  • Combine all the ingredients.
  • Preheat a bit of oil in a frying pan.
  • Cook each pancake until golden, approx. 1 minute on each side

Basic 2 Ingredient Pancakes

Servings: 4 | Time: 20mins

Ingredients:

  • 2 ripe bananas
  • 4 large eggs

Directions:

  • Mash the banana and whisk the eggs carefully.
  • Mix everything together and fry each pancake for about 30 seconds on each side in a frying pan.
